An evening snack for a quick pizza temptation

This recipe calls for the healthiest, lightest kind of pizza. Often, the temptation of tingling the taste buds with some marinara and cheese urges but the fantasy is turned down by the thought of feeling heavy or losing the appetite for dinner later. This one serves perfectly to those who want to maintain low calories as well as enjoy the flavors of pizza.

Ingredients:

4 large capsicums

1 cup grated mozzarella

1/2 cup corn

1/2 cup onions

1/2 cup mushrooms (if desired)

1/2 cup of chicken salami (if desired)

Salt and pepper to taste

Recipe:

Cut the capsicum into disks by holding onto the stem and slicing it from the four sides so that what remains can be used as a base. Spread the sauce over each of these disks. Add toppings as many as desired. Top each disk with mozzarella. Preheat oven to 350 degrees. On a baking tray, sprinkle oil evenly so as to make the capsicum crisp. Place each disk over the tray and bake for 10-12 mins or until the cheese has melted.

Enjoy a healthy snack and relish a pizza at the same time!
